Steaks Cut by Hand Our beef is wet aged for 35 days and then hand-cut by small-town butchers who take pride in preserving the art of butchering. Each steak is individually packaged in heavy, high-barrier plastic cryo-vac packaging and flash-frozen.

Packaged with Care We ship each order in an insulated Styrofoam cooler, packed with dry ice to keep the product in a deep-frozen state during the entire shipping process.
